I'm officially a nurse. A nurse that works on a medical oncology unit. :) My life has changed in so many ways the past year (ups, downs, good things, bad things), but I finally feel like I've been able to settle down and actually enjoy life. Since I feel more stable I've decided to get back into blogging. Lately I've been focusing on healthier meals and eating less dairy/grains. (Okay, so I don't strictly adhere to this diet)... but through some research I've found that it's something I want to try out and see how it affects my overall health/ energy. So bare with me and enjoy this ice cream.
Ingredients;
2 frozen bananas
2 dates
1/4 cup chopped walnuts
Directions:
Freeze bananas overnight or for a few hours. Chop up dates and walnuts. Place frozen bananas into food processor and pulse until it becomes a creamy/ ice cream texture (don't over process!). Add dates and walnut and pulse a few more times. Voila!
