Homemade Poptart Pies


I just HAD to bring myself back to my childhood. Pop-tarts. Yum. Granted, I don't think I could go out and buy a pack of Pop-tarts and enjoy them as much as I did as a kid (all that sugar!!). Therefore, I decided a homemade version would taste one million times better, and boy was I right! I experimented with both berry and cinnamon sugar so you can choose the one you prefer. Cinnamon sugar was my ultimate favorite growing up, but for these the berry ones turned out better because the cinnamon sugar seemed a bit too dry with this type of dough. Maybe experimenting with a different cinnamon sugar fillings would make them taste better, or perhaps I didn't add enough to the bars? Something to consider in the future. Also, this dough is amazing as a healthier alternative. I never seem to have butter laying around, so I love trying out different coconut oil doughs. This is my favorite so far! Enjoy, and let cool before eating so you don't burn your tongue like I did...






Either choose the Berry or the Cinnamon sugar, or you will need to double the amount of dough to make both.

Ingredients:
Dough
1 cup all-purpose flour
1 cup whole wheat pastry flour (can sub for another cup of white or oat flour)
2 tsp granulated sugar
3/4 tsp salt
1/8 tsp nutmeg
2/3 cup coconut oil, chilled*
6-9 Tbsp ice cold water

Berry Filling
2 cups fresh blueberries
1/3 cup granulated sugar
1 Tbps cornstarch
OR
Cinnamon Sugar Filling
1/2 cup brown sugar
1 tbps cinnamon

Directions:
1) Preheat oven to 350 degrees. In a food processor pulse the flour, sugar, salt, and nutmeg. Add in coconut oil and pulse until combined. Slowly add in water until the mixture comes together easily.
2) Place flour down on a clean surface and roll out pie crust to cut into 10 even rectangles.
3) In a mixing bowl mix together either the berry filling or the cinnamon sugar filling. Be sure to mash up all the blueberries.
4) Generously add the filling to one square, the top with a second square. Seal the edges with a fork. Transfer to a baking sheet lined with parchment paper. *optional: spray the tops with coconut oil (or drizzle melted coconut oil) and sprinkle with granulated sugar
5) Bake for 30-35 minutes or until golden. Allow to cool.

*Make sure coconut oil is solid and not melted.
