Brussel Sprout Hash



The boyfriend brought home some brussel sprouts from the Farmers Market the other day and I wanted to find a creative way to eat it. After some googling and pinteresting I came across this recipe. It was simple, quick, and turned out to be delicious. It's not the best photo (I was too hungry and tired to pull out the nice camera), but in person it looks a lot more colorful and appetizing, I promise. Enjoy!



Ingredients:
½ lb Brussels Sprouts, shredded
½ medium red onion, diced
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons water
1-2 eggs

Directions:
1. Heat oil in a skillet over medium heat. Add in onions and saute for 3-4 minutes. Stir in shredded Brussel Sprouts, salt, and pepper. Let cook for two minutes, add in tablespoons of water, cover, and cook until Brussel Sprouts are tender.
2. Remove lid, make well in center, and crack eggs. Cover and let cook until egg whites have set and egg yolk is desired consistency.

I also used garlic salt!
