Chocolate Quinoa Nut Bars

Did you know you can pop quinoa? Just place it in a hot pan over the stove and let it sit for a few minutes occasionally shaking the pan. It gives off a yummy nutty flavor, which happen to be perfect for these bars! I have to admit that I spent my whole Saturday evening cooking and drinking wine, but at least I produced some good things to share with everyone.

Simple Whole Wheat Blueberry Pancakes


Calm Sunday mornings warrant some delicious whole wheat pancakes. These are simple since I ran out of some kitchen staples, but they turned out well! Next time I might use less baking soda because they were pretty thick. However, the thickness made them even better in my opinion. :)

What a cute place! I loved it because of the homey feeling and the little terrariums that hung from the ceiling. My grandparents came to visit me for brunch so I decided to check out this place and I'm glad I did! The portions were small, but that's good because for once I didn't overeat haha. I went with the french omelet which was stuffed with mushroom, a little bit of arugula on the side, and got some potatoes on the side with my ginger tea. Mmm.

Banana Ice Cream




I'm officially a nurse. A nurse that works on a medical oncology unit. :) My life has changed in so many ways the past year (ups, downs, good things, bad things), but I finally feel like I've been able to settle down and actually enjoy life. Since I feel more stable I've decided to get back into blogging. Lately I've been focusing on healthier meals and eating less dairy/grains. (Okay, so I don't strictly adhere to this diet)... but through some research I've found that it's something I want to try out and see how it affects my overall health/ energy. So bare with me and enjoy this ice cream.
