Tapas, mojitos, beach, and clubs. This was definitely the most "party like" destination we stopped at. We might've only had one full day in Barcelona, but we took advantage of each minute. We spent most of our first half day walking around and checking out the beach, hit up the clubs at night, and then visited the Sagrada de Familia and ate tapas the next day. We even tried snails! Gotta love that escargo. Unfortunately a lot of my food pics were saved on my phone, which happened to get stolen when I came back to the US. How I manage to only lose one pair of boots in the three weeks of travel and not get pick pocketed until I got back home is beyond me.

Quick N Healthy Peanut Butter Cookies
Who can't resist a recipe that only has three ingredients? Three wholesome ingredients. Yes please. I've made these cookies three times in the past week and even brought them to work (they were devoured). Just don't forget use only all natural peanut butter- with limited oil added. The kind that you can grind at the grocery store or make yourself is best, I learned that the hard way....
Coconut Fish Curry
Ingredients:
1 fish fillet (I used cod)
1 can coconut milk
1 can diced tomatoes
2-3 tbsp of curry powder
2 sweet potatoes
1/2 head of broccoli
1/2 head of cauliflower
Directions:
1. Chop and saute the sweet potatoes with oil in a large pan.
2. Add the broccoli and cauliflower, cook for a few minutes. Add curry powder and continue to cook until thoroughly covered.
3. Empty the can of coconut milk and curry powder into the dish, let simmer for another 5-10 minutes until vegetables are cooked through.
4. While vegetables are cooking prep the fish by seasoning with salt & pepper. Add to separate pan and cook for a few minutes on each side. Cut up and add to the final dish.

I've been reminiscing on my Europe adventures these past few weeks. Possibly because I'm about to have an adventure soon with my man to Greece. Thus, I've spent countless hours drooling over my old photos and photoshopping what I like/ getting ideas for wall photo decorations via pinterest. Through all this, I've decided to post some of my favorite pictures here. Unfortunately there are limited food pics, because to be honest I was poor and barely ate when I went over a year ago. I can't believe it's been so long already. Enjoy!

Rhubarb Cobbler
All summer my mom and grandparents fought over whose garden would have better produce. My mom even went so far as to hunt down what type of fertilizer they used by investigating their trash cans... haha. I had no problem with this competition because the outcome included an abundance of fruits and vegetables for me to cook with. :)This one day in particular I left a family hang out with a big supply of rhubarb. What else better to do than make a cobbler?
