Coconut Fish Curry
Ingredients:
1 fish fillet (I used cod)
1 can coconut milk
1 can diced tomatoes
2-3 tbsp of curry powder
2 sweet potatoes
1/2 head of broccoli
1/2 head of cauliflower
Directions:
1. Chop and saute the sweet potatoes with oil in a large pan.
2. Add the broccoli and cauliflower, cook for a few minutes. Add curry powder and continue to cook until thoroughly covered.
3. Empty the can of coconut milk and curry powder into the dish, let simmer for another 5-10 minutes until vegetables are cooked through.
4. While vegetables are cooking prep the fish by seasoning with salt & pepper. Add to separate pan and cook for a few minutes on each side. Cut up and add to the final dish.
