Red Velvet Cookies
Lately I've been in baking mode. That and throwing together dishes with the random food I have lying around... which is why I haven't been able to post anything recently. There's just been no rhyme or reason to what I've been eating. Plus, working 80 hours in a 7 day span, spending more time working out, and booking every day off I have with friends on my weeks off from work has been wrecking havoc on my life. I need to evaluate what I want to spend my time on. I've decided since getting better sleep will be nearly impossible working night shift (it's turned me into an insomniac), then I will have to focus on eating healthy, exercising more, and dedicating more attention to a hobby. More to come on that, for now I will share these incredibly unhealthy, but delicious cookies. Anyone can use a little treat here and there right?
Red Velvet Cookies
Ingredients:
1 and 1/2 cups + 1 tablespoon all-purpose flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted cutter, softened to room temperature
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 egg, at room temperature
1 tablespoon milk (any kind)
2 teaspoons vanilla extract
1.5 tablespoons red food coloring (or 2 tsp beet powder)
1 cup semi-sweet chocolate chips
Directions:
1. Mix the flour, cocoa powder, baking soda, and salt together in a large bowel.
2. In a seperate bowl. Take a handheld mixer and beat together the butter until creamy, 1 minute. Then beat in the brown sugar and granulated sugar until combined.
3. Add in the egg, milk, and vanilla. Mix the dry and wet ingredients together.
4. Mix in the chocolate chips, roll into a dough ball and cover with plastic wrap.
5. Chill for at least 1 hr or up to 5 days. Let dough sit out at room temp for 1 hour if chilling for over a day.
6. Preheat oven to 350F. Roll into small dough balls onto baking sheets and bake for 10-11 minutes. Press down lightly to form crinkles in the cookies and allow to cool.
*I ran out of food coloring so my cookies are very dark. I would've liked them to be lighter, but I was making do with what I had!
