12-16 oz halibut
1/2 cup basil
1/4 cup olive oil
1/3 cup chopped walnuts
1/4 cup parmesan *opt
Directions
Preheat oven to 350F. Blend basil, olive oil, and parmesan cheese in a food processor. Chop walnuts and add to pesto, pulse a few more times. Brush all ingredients on the halibut and bake for 20-25 minutes or until fish is 145F.
Very easy, fast, and healthy dish to make any night of the week. I added baked sweet potatoes and sauteed asparagus to go with this recipe, it might also pair well with some roasted vegetables.
