Yes, it's after the holidays and I should be starting to eat healthier, but I never had the chance to make any holiday cookies so I decided that I deserved some peanut butter cookies. Okay, yes, I might've been craving them for the whole week as well...
Ingredients:
1 cup sugar
1 stick butter, room temperature
1 egg
1 cup peanut butter
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1 1/2 cups flour
Directions:
- Preheat oven to 375 degrees. Add the butter and sugar to a large bowl and mix with electric mixer. Add in egg and mix again.
- Mix in peanut butter and vanilla until smooth and creamy. Add the salt, baking soda and flour and mix until well combined.
- Roll dough into one inch balls and place on a greased baking sheet.
- Flatten with the tines of a fork to create a checkered design.
- Bake for 12-15 minutes, makes about 2 dozen cookies.
