Peanut Butter Cookies

Yes, it's after the holidays and I should be starting to eat healthier, but I never had the chance to make any holiday cookies so I decided that I deserved some peanut butter cookies. Okay, yes, I might've been craving them for the whole week as well...




Ingredients:
1 cup sugar
1 stick butter, room temperature
1 egg
1 cup peanut butter
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1 1/2 cups flour

Directions:
  1. Preheat oven to 375 degrees. Add the butter and sugar to a large bowl and mix with electric mixer. Add in egg and mix again. 
  2. Mix in peanut butter and vanilla until smooth and creamy. Add the salt, baking soda and flour and mix until well combined.
  3. Roll dough into one inch balls and place on a greased baking sheet.
  4. Flatten with the tines of a fork to create a checkered design.
  5. Bake for 12-15 minutes, makes about 2 dozen cookies.
