Tomorrow marks the first day of my last winter quarter of nursing undergrad classes ever. After reviewing the massive syllabi and organizing my calendar I became overwhelmed and decided to cook/bake all day instead of finishing the homework that I've already been assigned. Thus, my dinner included coconut shrimp, guacamole, and peanut butter cookies. I had to work with what I had in the house, but collectively I'd say it was a pretty good meal, yes random, but definitely delicious.

Peanut Butter Cookies
Yes, it's after the holidays and I should be starting to eat healthier, but I never had the chance to make any holiday cookies so I decided that I deserved some peanut butter cookies. Okay, yes, I might've been craving them for the whole week as well...
Guacamole
Somehow I always have all, or most, of the ingredients to make this recipe. I am a huggee fan of avocado, I use them for sandwiches, dip, tacos, enchiladas, pretty much anything tastes good with it. This recipe is simple and easy to make up in a matter of minutes, which is why sometimes it substitutes as my lunch. There are many different variations and things you can add to guacamole, but this is my personal recipe since these are the items I tend to stock around the house most often.

Paneer Curry
This recipe may take a little prep time, but it is one of my favorites. I'm a huge fan of currys (non spicy ones that is) and this one is easy to make at home, but tastes delish!

Quick & Easy Veggie Taco Salad
Here's yet another salad recipe that I dished out this week. I love taco salads (I think it's a combo of the crispy chips, the ranch dressing, and cheese). The best part is that I spent under 5 minutes prepping.
